Except for smoking salmon, I pretty much only grill fish. I think that’s the reason I like redfish so much. There’s nothing better to grill than redfish on the half shell.
There’s also nothing better to fry than small catfish, but I don’t know where you can get small catfish.

Hell if it ain’t big enough for me to stick my arm down its neck to my elbow I ain’t interested.
If anyone ever figures out how to grill a fish worth a damn do let me know. I always end up leaving 70% of the skin on the grill. It is displeasing.
He has taken quite a bit of flack so far this year but Jason Castro had a hell of a game.
