I don’t have a favorite fish but my favorite fish dish was huachinango al mojo de ajo the way they used to make it at Curra’s Grill in South Austin. They changed something about the way they make it about 5 years ago and it’s not as good as it once was.

The Japanese are obviously the world beaters when it comes to fish, but for my money ainnobody grill a fish like a Mediterranean, especially the Greeks and the Turks. I can’t figure out how the hell they get the skin crisp and black and the meat moist as can be. I’m a pretty decent cook and I can’t get close to that. Maybe their coals burn at 9000 degrees or something.
The Portuguese beachside fish grillers do an amazing job too.
I really need to do some fish grilling. I seem to always default to baking. I don’t ever fry fish for myself. I think I need to start grilling it.
