We have a friend who is a professor of oysterology at Texas A&M Corpus. He was brought in from Florida to help kickstart Texas oyster farming. He says that the reason you donāt eat summer oysters is not because of water temperature, that thereās not much safety difference in August Gulf temperatures and October Gulf temperatures, but because oysters are all flacid, unplump, and unpleasant from summer spawning. If youāre in general good health, and the water is clean, you should be able to eat any seasonās oysters, they just arenāt as good.
Thatās what he says anyway. Texas, by the way, is one of the few states that hasnāt moved its oyster production to farming, where safety is easier to control.
