This is a fantastic recipe with a cheap cut of beef, as opposed to tenderloin (I used fresh garlic and onion, and a couple of sprigs of thyme and rosemary). The leftovers make excellent roast beef sammiches. While the meat’s resting, use the jus and some stock and some wine and make a mushroom sauce.
