With the price of beef being what it is, tri-tip has become my new go to cut. Left-overs make good sandwiches.

Fun fact, Bachan’s is a family over in Sonoma and the Original is based on their grandmother’s recipe.
Tri-tip has been my go to for years. Perfect for when we’re having folks over for dinner and need a main protein.
On the to do list for the house is to eventually put in a Santa Maria grill so I can do a tri-tip properly.

I never knew what a tri-tip was until I lived in Argentina. I don’t know what a Santa Maria grill is yet but learned quickly what a parilla does.
I first had tri-tip years ago on a visit to the Bay Area. Loved it. Tri-tip used to be hard to find in Central Texas – I had to go to a butcher shop to get it but It has grown in popularity over the past 20 years, maybe due to a lot of Californians that have move here and now it’s found at H-E-B.
A Santa Maria grill is basically an Argentinian grill.
Just popularity via cooking shows, ala flank/flat iron/etc…
