I’ve been diligently working through Rob Walsh’s Tex-Mex Cookbook. Here is what I learned last night.
While corn tortillas are great fun to make at home and are excellent, flour tortillas are messy and the results suck. If you have to have flour tortillas, you can buy much better at HEB.
Chicken fajitas suck wherever they come from, including home.
HEB’s tortillas are excellent. As are their chips, salsa, guacamole, and brisket queso.
Hmm. I love HEB flour tortillas but I’ve also had pretty good results at home. How much lard did you use?
One quarter cup lard to a bit less than 4 cups all purpose flour, with a cup of hot water. I used the press instead of rolling them out. The biggest problem was that they sprang back, so each tortilla thickened and shrunk before it was cooked. They turned out more like thinnish tasteless pancakes than tortillas.
I tried a new salsa that I found at Costco and I must say I am impressed.
I realize all you Texas folks have different opportunities for Salsa that us poor northwesterners don’t.
But if you are interested, or just want to tell me I have no idea what good salsa is:

I’ve eaten Pace’s Picante for years, and like it, but I know in my heart of hearts it’s pretty terrible stuff. I’ll cast no stones, and Costco has good buyers.
Mateo’s is quite good
As far as store-bought salsa goes, I haven’t found better than Mark’s from HEB.

I’ve been liking the Mateo’s from Costco lately. Better than their usual and I hope they keep it around a while.
Nothing wrong with Paces Picante. It’s hot version has been my go-to for years when I want a certain taste for chips and dip. It’s kind of like a McDonalds hamburger. It’s not really like any real hamburger anyone would make or buy in a reputable restaurant but it’s good in its own right. Paces is like that.
I don’t know if it’s Mark’s, but the salsa they sell at HEB, alongside the fresh guac and chips, is outSTANDing. I go through cartons of that stuff.
The one in the square plastic containers?
Mark’s or Mateo’s are the jarred ones I keep around in the pantry for salsa emergencies.
eta on Mateo’s: if yall ever see the green label hatch chile variety, give it a shot. It has the best flavor of the 3 imo but is not that hot. I add some Yellowbird serrano hot sauce to it.
I have lately become a huge fan of the Sabor Mexicano “Home Made” salsas they sell at Whole Foods here in Asheville. Not sure if they’re everywhere. The Verde and the Chunky roja are both terrific.
