@HudsonHawk, I know we talked about homemade limoncello recently, and now that my Meyer tree is covered in them, do you have a preferred recipe?
Basic average-to-bad gin is horrible, good-to-great gin is delicious.
This is the recipe I used. I used about 10 Meyer lemons to 750 ml of Everclear.
Will watch, do you prefer yours thicker, almost syrupy, or more like wine? I like 'em thick.

You should pickle some of the lemons Indian style. I did that a few years ago and they came out pretty good despite my having no idea what I was doing.
I like em thick too. As for my limoncello, it should be a liqueur consistency, so it should have some body. In between wine and syrup, I guess.
I made some lemon preserves a few years ago. It was pretty good. I’d make again. Never tried pickling.
