Have you ever done pork/onion/pineapple asado without a rotating spit?

Also: gyros?

Not that particular combo, but certainly things similar. I might be misunderstanding, but if you’re looking for a cheap entry into an open fire rotisserie and have one of the ubiquitous Weber 22’ kettles this will open up some doors:

Plus, the “Santa Maria” option works surprisingly well. For both uses you remove all grates and accessories and use the bottom half of the kettle as your fire pit.

Interesting. Is there a similar sort of Santa Maria system for Green Eggs?

Shouldn’t the spears and the rotator go above the grate?

You remove the adjustable grate when using the rotisserie and remove the rotisserie when you’re using the grate. Make sense? The pic is dumb…

I would imagine so, there’s a whole world of aftermarket mods for all popular grills/smokers.

There is a whole “modding” culture around BGEs.

Maybe I can figure out a way to make mine bounce around.

There’s a good chance someone has already done that.

So last night Mrs. Hawk and I went to a wine dinner at The Chef’s Table in Houston, one of our favorite restaurants. The theme was “Out of Africa” (Chef Paul there is from South Africa, and they regularly feature many South African dishes and wines). The menu was thus:

Amuse-bouche: Bruschetta with tomato and vanilla balsamic glaze.
Wine: Anura Chardonnay 2023

First Course: South African Sole
Wine: Anura Rose 2023

Second Course: Wild game sausage made with ostrich, impala, lamb and pork
Wine: Anura Tempranillo 2020

Third Course: Grilled ostrich
Wine: Anura Pinotage Signature 2020

Fourth Course: Karoo lamb
Wine: Anura Cape Cuvee Signature 2018

Fifth Course: Impala
Wine: Anura Merlot Signature 2017

Dessert: Melk tart parfait
Wine: Anura Layla Blaire Signature 2018

Of course everything was fantastic. I had never had ostrich or impala. The ostrich was not what I was expecting. It’s red meat, even though it’s a bird, and it tastes more like prime rib. It’s extremely low in calories, fat, and cholesterol, even more so than skinless chicken breast or turkey. The impala, I expected to be like venison, but was more like skirt steak. It’s extremely lean, so it doesn’t exactly melt in your mouth. Neither were gamey. The wines were all good, but my favorite was the Pinotage. The Tempranillo was good, but exceptionally dry. It’s probably not for everyone. The merlot…meh…it’s merlot. It’s a “Tuesday night” wine.

There were certainly worse ways last night you could have spent your time.

Merlot when done well is one of my favorite wines to drink. Sadly, like Tempranillo (which is pretty run of the mill for me), there aren’t too many folks who do that.

Ostrich sounds like kangaroo, which I had a few times in Aussie and enjoyed.

I’ve never had impala but did eat some Springbok when I was in South Africa. Really liked it.

Remember the Texas emu craze back in the 90’s? I remember it being pretty damn good, and basically how HH describes ostrich.

I made it a point to try every burger at Ziggy’s Healthy Grill back in the day…that included ostrich and kangaroo (only time I’ve eaten those)

You just reminded me that a restaurant out here used to have an ostrich burger on the menu. Really damn good, so I suppose I’ve technically eaten ostrich.

Axis makes a great burger (and everything else too), Nilgai + goat cheese is also excellent as a burger.

Couple of my cousins took their dad on a South African hunting trip a few years ago, they were interested in “deer/antelope”, types, things with horns only (no cats or elephants or such) and the locals at their lodge prepared feasts with everything they brought back (can’t take it home). There were people from surrounding villages showing up, and it was from what I’ve been told absolutely amazing.

One morning they were served an ostrich egg 1-egg omelet that served the entire table.

There’s an ostrich farm in Santa Barbara near Los Olivos. Every time we’re down there, I threaten to get an egg for friend of mine who continually jokes about making an omelette with one.

I did Kruger years ago. I l vividly remember being in one of the adjoining private parks and coming across several lions with their recent water buffalo kill. The male’s roar was staggeringly loud. One of the females made eye contact with me. In that moment, I understood millennia of evolution that she was designed to kill me and my ancestors.
