People waste somewhat “gamey“ fish all the time. It’s literally the reason why sauces like a Thai red curry or a French beurre blanc were created. The spice pairing between the sauce and the slightly pungent fish is masterful. Well done not throwing the three day old fish out for the coatimundi.
